Was the flight much cheaper because Dial a Flight added on the extras rather than build them into the price ?

Not the banks. That'll be Dial a Flight choosing to show this as a charge. They (Dial a Flight) know what the bank charges them to use plastic cards as payment and therefore what they choose to take in their own profit margin or not.
