How do I do this as I'm guessing there's no Brighton train from London Bridge anymore? Thank you.

Either go to Blackfriars as above, or go to London Bridge as previously, get a train to East Croydon and then change there for a Brighton train.0

There are trains leaving from London Bridge, if you are planning to go on a weekend then you can purchase a Thameslink Super off peak return from London Bridge to Brighton for £10.
