All licensed premises in England and Wales are required by law to provide "free potable water" to their customers upon request.

They're not charging for the water, they're charging for the person serving it.

The current administration chose to continue outsourcing catering when the contract came up for renewal.

There are arguments for and against outsourcing but I found it odd that we brought retail, admittedly a smaller operation and head count, back in house but left the catering outsourced.

It leaves the club at the mercy of another company and with no flexibility and huge costs for events like this.

I guess the difference with retail is you are open consistent hours for the whole week, all year so can have full time staff. F&B staff will almost exclusively be agency workers and so you’re basically beholden to one third party anyway. The argument then is why not just give the whole thing over to a third party?

You are correct I think in what you say about the club running its own catering. The staff would be (very) part-time. As such IMO it would be difficult to recruit them, train them, and retain them. The service, certainly in the lounges where most of the G&G staff are very good, would likely suffer. I don't think you are quite right though to say that the G&G staff are agency staff. I believe most of the professional catering people are full-time employees of G&G.  So, they could, for example be working at a G&G operation in UCL during the week but turn their hand to working at Charlton on the weekend/evenings. I know that some of them also work at Watford FC. I am sure there are other sites. It is true though that many of the serving staff will be youngsters either at college or Uni who work part-time.

If you’re a licensed premise then of course someone will be serving it. The law wasn’t written with the idea in mind that a licensed premise would say ’here’s a jug, go into the kitchen and fill it yourself.’
