If we're straying into the World of Scandi folk, I'll start you off easily with this ... an incredible version of Leonard Cohen's 'Famous Blue Raincoat' by the wonderful Eivør.
As nothing could possibly try and succeed to get any where near the beauty of Joni Mitchell’s ‘Blue’ I quite like this Cat Power cover as it isn’t trying to mimic but just using the beautiful pattern of lyrics to create something new. https://m.youtube.com/watch?v=jwzcBHDIqKE

That version is absolutely truly bloody awful. There is absolutely no emotion in it.
This is right up there in the "How to ruin a truly classic song by covering it with a (usually female) insipid vocal that adds absolutely nothing to the song" stakes. The fact it's such a great song is the only reason for anyone to listen to it, so even Susan Fucking Boil can't completely ruin it. Although she gives it a bloody good go.
As you can tell, I'm on the fence with this one.
As a fan of the show, the song is all about the emotion of Fantine's situation. Susan Boyle's version lacks even a fraction of this emotion. The Crazy Frog couldn't do a worse version.

Was Fantine in the Rolling Stones then? Didn't know that ... ;-)

She tends to do much more folky/techno stuff ... with the voice of an angel. Think of a Faroese Kate Bush.
And, if Finnish is your thing, check out Värttinä.
Here's a taste:

I know the bass player, Hannu, and was in Helsinki when the band recorded Miero in 2006. They make quite a good noise.
An Arianda Grande cover that sounds amazing. Rozzi Crane is truly an astonishing vocalist....
Is it just me?
An amazing cover version of Bohemian Rhapsody...

Black Pumas - Eleanor Rigby
Psychedelic cover version.
It is completely different to the famous Whitney Houston version and I prefer it .
