The umpires' decision was wrong. Bairstow was not attempting a run. The wicket was broken by the wicket keeper, without an intervention from any other fielder.
According to Law 39.1 therefore, he was out, stumped

I’d like to see a replay of what the umpire was doing immediately after the ball went through to Carey. It looked as though Bairstow looked up at him and the umpire moved towards bowler taking the bowlers hat/glasses off. If that was the case should the umpire have intervened before it went to tv umpire?
That's the key. If the umpires walked away or acted as if the ball was dead, then that should have been a deciding factor

A couple of years ago I had the short stuff on the machine aimed at Seb's chest at AH. Having worn one or two, he asked me what speed it was so I said to him "it's only 70mph for gawd's sake". He then began to play them at lot better. Only told him once we'd got home the true speed was, actually, 80mph. As I say, great prep for the real thing,

I think you're right. But an important point is that the Laws of cricket have been rewritten since then to include an important preamble about the Spirit of the Game.
It's up to the Australian players - and, in particular, they're captain - to demonstrate that their action was within that spirit.
For me, a closer analogy was with Ian Bell at Nottingham in 2011. He was out of his ground having hit what he thought was a boundary. The ball was returned to Dhoni, keeping wicket. Dhoni took the balls off and appealed. The umpires reviewed the footage and (correctly) gave Bell out.
Dhoni reflected on his appeal during the following break and withdrew it, asking the umpires to rescind their 'out' decision. (Technically, they shouldn't have).
Bell resumed his innings. Dhoni received a Spirit of Cricket award from the ICC.

I'm more worried about the real thing bowling-wise, which appears to be 'being fed into Bickley's overseas pro threshing machine'. One over of that enough to completely ruin my life yesterday. Someone should have told me 'he's only a 3rd XI player' beforehand

That "stumping" was as bad a bit of sportsmanship as an occasion of a bowler running out a batsman at the other end if the guy sets off too early, ruined a good game in my opinion and shows up the Aussies for what they are...clearly Bairstow was of the opinion the ball was dead...🤷♂️
