Beans, hash browns, scrambled eggs, sausages, toast(in triangles, it just tastses better) (not fried bread, can't stand it), grilled tomatoes (these are hit and miss, either amazing or a real chore to eat), mushrooms.
All accompanied by a lovely cup o tea, never coffee with a fry-up.
When I went to prague I went to an american style diner (think it is a chain) and had a fry-up with pancakes and maple syrup which I turned my nose up at to start with but was converted very quickly - got to be a special occasion to be this indulgent though.

I used to be the same up until reaching 40. Now I'm getting to ridiculous pot bellied stage and have managed to put on nearly 2 stone in a year and a half.
My additional intake of booze over that time may well have caused this. Going to try and cut it back to 5 pints a day now.

As for me I'll have anything on mine except black pudding. I do get funny looks sometimes when I ask for vinegar, but you can't beat it on a fry up.
Incidentally when you are on the other side of the pond, maple syrup with your bacon is amazing.
Bubble, hash Brown's, fried slice and chips are all welcome additions but I wouldn't ever add them at home.
