My vegan nieces came to stay the other week. I took them to a vegan restaurant in Folkestone called Dr Legumes. Excellent food and their oatmilk cappuccino was the best coffee I've had in years. It was a genuine brown eye opener.
Hardcore vegans do not eat honey. Lots of people who have a mainly vegan diet but may have a pair of leather shoes or a leather belt will eat honey. Not everyone has the same rules for themselves,

There are are many shades of human and of belief and generally I support anyone who looks to build something long lasting and sustainable whatever the quirks that deliver that.
